Lesson in Caviar knowledge


Sevruga
The smallest of the Caspian Sturgeon, in turn produces the smallest eggs which are dark grey - black in colour. Despite being more widely available, it's fine and delicate taste still represents one of the greatest delicacies.
Oscietre
Another native of the Caspian sea, the Oscietre Sturgeon nurtures larger firmer eggs ranging in colour from grey - brown to golden. Oscietre caviar is appreciated for it's unique taste sometimes likened to hazelnuts.
Imperial
A long time favourite of Persia's ruling elite, Imperial is truly an exceptional caviar. Imperial Gold is taken from a particularly rare species of Sturgeon, the Oscietre Karaburun. Many gourmets prefer this product of the Oscietre Sturgeon, renowned for it's large golden grain and delicate nut like flavour with a hint of spice.
Beluga
